We are located in Hunterdon County New Jersey not far from the Delaware River between the towns of Flemington and Frenchtown. Born and raised in Hunterdon I have spent years in the South as well as Ohio. My cooking style is derived from a little of what I seen in the South (Virginia & Tennessee), and just a whole lot of trial & error. We cook all most all the meats over hardwood charcoal as well as other cooking woods such as cherry, apple and white oak. I am a member of the Kansas City BBQ Society and try to get to local cook-offs when I can. My goal is to come to your location and roast a pig in a timely fashion and have the meat taste awesome. Our cooking equipment is not the fancy-est nor the most expensive, but it works fine and turns out a wonderful product time and time again. I try to let people see what it is like to have a roasted pig "country style" but keeping with the catering context. We can also do side dishes and other meats such as chicken, top round beef, roasted turkey, smoked ribs and smoked wings. This is pretty much a full time job in the warmer months and I drive a school bus when not cooking.

I find that cooking a pig is some how an amazing thing to many people. In the days of old cooking a whole pig was reserved for a special occasion and I find that it really is still that way. Most of the parties that we do are for special events like a birthday, baby's christening, wedding, graduation, company picnic and the list goes on...

Myself and the other cooks do our best to give you and your guests a good old fashion roasted pig. I wouldn't call it Southern style, rather West Jersey style. The South has a good reputation for bbq and roasted pigs but we can run with the best. I lived in the South for many years (the hills of Scott County VA. ) and observed the art (it is an art) of cooking with wood. At the time I didn't know it, but many years later I would bring all that knowledge back above the Mason/Dixon. Then as the years have passed by I have developed my own style.  A style of cooking that is focused on the taste of the "meat" and not on the latest spice or recipe on the food network or magazine article. This some times confuses people because they think of things they have seen on TV or in a resort and then they see me doing it differently. But not to worry I promise it will taste Great.
