This page is important because it will show
you what our "set-up" will look like at you party or event.
They say "a picture is worth a 1000 words". Our set-up is the same
almost everywhere we go because we have a little system going here.
We always bring everything we need such as tables (for us to work
on), canopy, wash water ect... In the picture above the roaster oven
is 6 feet x 4 feet, it is on wheels and will roll to just about
any spot you like. If you have a gate it must be 50 inches wide to get the roaster through. Some customers that have
"sectional" fencing will remove a section to get the roaster in. If
you chose this option we leave it up to the customer to do the
removing/replacing. The canopy is 10 feet x 10 feet and is
always located close to, but not right next to the
roaster. We bring the
canopy rain or shine. We can do the cooking in a driveway, back
yard, park, parking lot or just about anywhere. We try to keep the
roaster away from low hanging trees, wires and other flammable
things. Keep in mind there is an open flame for about the first 3-5
minutes as we light the charcoal, and the roaster does not put off
very much smoke. And last but not least we ask that you keep in mind
the following while planning the cooking location: traffic flow of
people, kids games, adult games (horse shoes, volley ball ...) will
we be able to get our equipment out before the party is over? (we
will be leaving about 1 1/2-2 hours after serving time of a
(basic pig
roast), parking of a full size truck/van
and one 10' trailer. As always we are willing to work with you, and
we realize some locations can present a little extra planning.
Carving &
Serving: I know it can be
confusing to see the canopy and carving table and think "ok that is where I get my pig meat". We do not serve from
the carving table because it gets messy and I just do not like to
hear "no I want that piece, no that piece right there". It is easier
and neater for your guests to get all the food in one place. So
we will put the meat in pans and take it to where ever you are
having the rest of the food served. For more info see
